It was a warm Sunday morning, and the perfect day for pancakes…coconut pancakes.I stirred up a bowl of pancake batter using the basic recipe from Joy of Cooking, then added unsweetened finely shredded coconut flakes and extra milk.  After flipping them on the griddle, I garnished with more coconut flakes and fresh banana.  Super easy!
